Recipe from Nicole...
4 cups diced rhubarb - Put in oven proof dish Crust: 3/4 cup flour 1 tsp baking powder 1/2 cup oats 3/4 cup sugar 100g butter Sift flour and baking powder, add oats and sugar, mix. Melt butter and stir well into dry ingredients. Sprinkle evenly over rhubarb. Topping: 3/4 cup brown sugar 1 tbsp. cornflour Mix together and spoon evenly over the crust. Carefully pour 1/4 cup boiling water over the top. Do not stir. Bake at 180degrees for 30 mins or until crusty and caramelised.
